They are hand harvested at the peak of ripeness and then placed in a saltwater brine and fermented for 12 months. The olives are then pitted and chopped before slow dehydration, resulting in our superior raw dried olives. This deliciously concentrated treat is then mixed with balsamic for a real taste sensation.
