    I wanted to love this because it’s a great idea for a product. However I found that the smell and flavour of the grain alcohol was much too harsh. It isn’t as bad in baked items but for items that receive less cooking the alcohol overwhelms the vanilla.

      We are very surprised in regards to your comment, it is the first time that we hear such feedback. Our Vanilla Extract is a high quality product. So thank you very much for letting us know!
      We use the proper dilution for our extract, which is 40% alcohol. This is the common standard for pure Vanilla Extract and the FDA requests that it contains, at a minimum, 35% alcohol. We actually recommend using or selecting an extract that uses ~ 40% alcohol by volume (aka 80 proof). This concentration is efficient at extracting the compounds and avoids the burning sensation of higher proof liquors. Vanilla extracts that don’t contain enough alcohol take longer to extract the delicious flavors and aroma. Fortunately, the powerful flavor and aroma of the pure Vanilla largely overpower the alcohol taste. We are sorry to hear that you do feel the alcohol is overpowering in items that require less cooking time. We will contact you directly to resolve this matter.
