Instructions

  1. Mix dry ingredients in a bowl. In separate bowl mix wet ingredients. Gradually mix the dry ingredients into the wet, being careful not to over mix. Sprinkle the top with coconut. For variation add 1 cup of berries or rhubarb. Bake at 350 for approx. 30 minutes or until toothpick comes out clean when inserted in center
