Pumpkin Seed Pesto



  1. Toast pine nuts in a skillet over medium heat.
  2. Place all ingredients in a blender or food processor and blend until it is a well combined paste, adding more olive oil if necessary.
  3. Cook pasta in a large pot of water until done. Drain and mix in pesto.
  4. Use over pasta, as sauce on pizza, spread on crackers or baguette.
