Ingredients
- 2 medium zucchini
- 1 meduim size onion, minced
- 2 cloves garlic, minced
- ⅛ teaspoon Gathering Place sea salt
- ½ red pepper, diced
- ½ cup corn
- 1 tablespoon olive oil
- ½ teaspoon Gathering Place smoked chili flakes
- ⅛ teaspoon Gathering Place black pepper
- ¼ teaspoon Gathering Place basil
- ¼ teaspoon Gathering Place oregano
- 1 egg
- ½ cup panko bread crumbs or cornmeal
Instructions
- Grate zucchini and place in colander. Generously salt and mix well. Let stand for 15 minutes to drain.
- Take a handful of zucchini at a time and squeeze out excess liquid over a bowl or sink.
- Place the squeezed zucchini in mixing bowl and add egg, seasonings, and breadcrumbs (or cornmeal) and mix well.
- In skillet add olive oil, onion & garlic and cook over medium heat for 3-5 minutes until translucent.
- Add to the zucchini mixture and mix until combined.
- Shape into burgers and place on a piece of parchment paper.
- Heat skillet on medium-high and cook 5 minutes per side.
- When flipping use 2 spatulas as they are fragile and may fall apart easily.
