Wild Salmon in Fennel Sauce

Ingredients

  • Wild Salmon fillet, about 2" pieces
  • 1 tablespoon Gathering Place fennel seed, roughly crushed
  • 2 tablespoon olive oil
  • 1 large onion, diced
  • 2 tablespoons celery, chopped
  • ½ cup tomato paste
  • ¾ teaspoon Gathering Place sea salt
  • 1 pinch sugar
  • 1 tsp Gathering Place black pepper
  • 2 teaspoons cornflour

Directions

  1. Heat oil in a pan, add fennel and cook, stirring constantly until they start turn golden brown.
  2. Add fish. Simmer for 2-3 minutes.
  3. Add chopped and sliced onions and celery. Cook till onions turn soft.
  4. Add tomato puree, salt, sugar and pepper.
  5. Add cornflour mixed in 1/2 cup water. Bring to a boil.
  6. Reduce heat and simmer for one minute.
  7. Serve over a bed of veggies or your favourite grain.
