Wild Salmon in Fennel Sauce

Ingredients
- Wild Salmon fillet, about 2" pieces

1 tablespoon Gathering Place fennel seed, roughly crushed
- 2 tablespoon olive oil
- 1 large onion, diced
- 2 tablespoons celery, chopped
- ½ cup tomato paste

¾ teaspoon Gathering Place sea salt
- 1 pinch sugar

2 teaspoons cornflour
Directions
Heat oil in a pan, add fennel and cook, stirring constantly until they start turn golden brown.
Add fish. Simmer for 2-3 minutes.
Add chopped and sliced onions and celery. Cook till onions turn soft.
Add tomato puree, salt, sugar and pepper.
Add cornflour mixed in 1/2 cup water. Bring to a boil.
Reduce heat and simmer for one minute.
Serve over a bed of veggies or your favourite grain.
