Ingredients
- 2 cups butter, softened
- 1 cup sugar

1 teaspoon Gathering Place vanilla powder
- 3 cups flour
- 2 cups Gathering Place coconut chips
- ½ cup sesame seeds
- ½ cup pecans or almonds, chopped
- ⅛ cup flax seeds
- ¼ sunflower seeds
Directions
Mix the dry ingredients in a bowl.
In separate bowl mix the butter and sugar and vanilla powder until light and creamy.
With mixer on low speed add the flour mixture gradually to the wet ingredients.
Stir in coconut, nuts and seeds.
Divide the dough into thirds.
Shape each into a 12-inch-long roll, wrap and chill approx. 3 hours (or store in freezer for up to 3 weeks).
Remove from refrigerator, cut into 1/4 inch rounds and place 1 1/2 inches apart on prepared baking sheet.
Bake at 300 F for 20 minutes or until golden.
