Hearty Vegetarian Stew




  1. In Dutch oven, heat oil over medium-high heat; brown meat all over, adding more oil if necessary.
  2. Reduce heat to medium-low. Add onions, garlic, thyme, parsley, oregano, bay leaf, salt & pepper and cook until softened, about 5 minutes.
  3. Add carrots, potatoes, celery, tomatoes along with stock and & bring to boil. Reduce heat, cover and simmer over medium-low heat or in 325°F oven, stirring once or twice, for 1-1/2 hours.
  4. Add peas, cherry tomatoes and vinegar; cook for 2 minutes. Discard bay leaves.
