Summer BBQ: Grilled Veggies with Halloumi

Flavourful and summer-friendly - veggie and halloumi skewers!

Ingredients

  • 3 tbsp olive oil
  • Juice of one lemon
  • 2tsp of Canadian Organic Parsley
  • 1tsp of Organic Cumin Powder
  • 1/4 tsp of Organic Smoked Paprika
  • 1/4 tsp of Organic Onion Powder
  • 1/4 tsp of Organic Garlic Powder
  • 1/2 tsp of Pure Fine Sea Salt
  • 1/4 tsp of Black Pepper Powder
  • 1/2 lb halloumi or similar cheese, cut into cubes
  • 2 zucchini, sliced into rounds
  • 2 yellow squash, sliced into rounds
  • 3 bell peppers, cut into chunks
  • 1 small red onion, cut into chunks

Directions

  1. If using wooden skewers, soak them in water for 30 minutes before grilling.
  2. Heat the grill to medium-high.
  3. In a small bowl, whisk together the olive oil, lemon juice, dried parsley, cumin, smoked paprika, onion powder, garlic powder, salt, and pepper.
  4. Add the halloumi and vegetables to a large bowl. Pour over the marinade and toss gently until well coated.
  5. Let them marinade for 20 to 30 minutes.
  6. Grill for 8–10 minutes, turning every couple of minutes, until the vegetables are tender and lightly charred and the halloumi is golden at the edges.
  7. Serve warm and enjoy straight off the grill!
