Ingredients
- 1 medium onion, sliced
- 2–4 cloves garlic, minced
- 2 medium carrots, julienned
- A few handfuls of mushrooms, sliced
- 2 tbsp coconut oil (divided)
- 1 block firm tofu, cubed

- 1.5 L broth (vegetable, bone broth, or homemade)
- 1 tbsp Bragg’s Liquid Aminos or tamari

1 tsp Gathering Place Antarctic Pure Sea Salt
- 200g rice stick or rice vermicelli noodles
- Fresh cilantro, for garnish
Directions
Sauté the veggies: In a pan, heat 1 tbsp coconut oil over medium heat. Add onions and garlic, cooking until soft and fragrant. Stir in carrots and mushrooms, cooking until carrots are tender and mushrooms are browned. Sprinkle in 1 tbsp Gathering Place Organic Chinese Five Spice and mix well.
Prepare the tofu: In a separate pan, heat the remaining 1 tbsp coconut oil over medium-high heat. Fry the tofu cubes until golden brown on all sides. Add a splash of Bragg’s or tamari, then sprinkle with 1 tbsp Gathering Place Organic Chinese Five Spice, tossing to coat evenly.
Heat the broth: In a large pot, bring the broth to a gentle simmer. Stir in 1 tsp Gathering Place Antarctic Pure Sea Salt (adjusting to taste, depending on your broth). Add the sautéed vegetables and tofu.
Cook the noodles: Add the rice noodles to the pot and let them soften for about 5 minutes. Stir to combine all ingredients.
