Slice the vanilla beans down the center length wise and chop into 1 inch pieces.
Pour alcohol into a glass jar. Put the cut beans in the alcohol and push them down until they are completely covered.
Tightly cover the jar and shake well.
Store in a cool dry place for six weeks.
Give the bottle a good shake once a week.
After this time, strain the extract through cheesecloth or sieve.
Store in a glass bottle.
