These pickles are a summer favourite in our house! Sweet, crunchy, and delicious - YUM!

Bread and Butter Pickles

This fabulous Bread and Butter Pickle recipe has been inspired by the Encyclopedia of Country Living but altered slightly to use apple cider vinegar, organic sugar, and our very own Gathering Place Organic Pickling Spice!

Ingredients

  • 6 pounds of pickling cucumbers (4-5 inches long)
  • 8 cups of thinly sliced onions (about 3 pounds)
  • ½ cup of Gathering Place Antarctic Pure Coarse Sea Salt
  • 4 cups of apple cider vinegar
  • 2 cups of organic cane sugar
  • 3 tbs of Gathering Place Organic Pickling Spice

Directions

  1. Wash the cucumbers, cut ½ inch off the blossom end, and thinly slice.
  2. Combine cucumbers and sliced onions in a large bowl and add salt.
  3. Cover with 2 inches of crushed or cubed ice and refrigerate for 3-4 hours. Drain before use.
  4. Combine the remaining ingredients in a large pot and boil for 10 minutes.
  5. Add the cucumbers and onions to the pot and slowly reheat to boiling.
  6. Fill your jars with cucumber slices and the cooking syrup, leaving ½ inch of headspace. Adjust your lids.
