Ingredients
- 2 sweet potatoes, cubed
- 3 potatoes, cubed
- 1 red onion, quartered
- 2 zucchini sliced into 1-inch slices
- 1 carrots, chopped
- 1 butternut squash, chopped
- 1 red bell pepper
- 4 cloves garlic, whole
- 3 tablespoons Gathering Place rosemary
- 1 teaspoon Gathering Place thyme
- Gathering Place sea salt, to taste
- Gathering Place black pepper, freshly ground to taste
Directions
Preheat oven to 400 ºF.
Toss vegetables with olive oil and herbs.
Lightly oil a large baking sheet. Place veggies onto prepared baking sheet.
Bake in oven for 45 minutes (or until tender), stirring occasionally.
