Try our Easy Apple Pie recipe, made with layers of thinly sliced apples and just enough light batter to hold them together. As it bakes, the batter practically “disappears” between the layers of fruit, while Gathering Place Organic Apple Spice and Lemon Powder add a touch of warmth and brightness to this simple, apple-packed dessert.

2 large eggs

¼ cup (50 g) organic cane sugar
½ cup (120 ml) milk or non-dairy milk
½ tsp
¼ cup (60 ml) melted butter, divided
½ cup (80 g) sweet rice flour, or ½ cup (65 g) regular flour
3 tbsp cornstarch
1 tsp baking powder
2 lbs (900 g/about 5 medium) organic apples
½–1 tsp
Preheat oven to 350°F (180°C). Grease an 8-inch springform pan or 9-inch deep-dish pie plate and line the bottom with parchment.
Whisk together the eggs, sea salt, sugar, milk, lemon powder, and 2 tbsp melted butter. Add the flour, cornstarch, and baking powder and whisk until smooth.
Peel and slice the apples very thinly. Add the slices to the batter a handful at a time, tossing gently to coat and separate them.
Transfer the apple mixture to the prepared pan in batches, pressing the apples down as you go.
Smooth the top, drizzle with the remaining 2 tbsp melted butter, and sprinkle with Apple Spice.
Bake for 50–55 minutes, until golden and bubbling around the edges. Let cool completely before slicing.
